Cranberry Swirl Coffeecake Recipe

Ingredients
  • 1/2 c butter
  • 1 tsp baking soda
  • 1 tsp almond extract
  • 1/2 c sour cream
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 c blanched slivered almonds
  • 1/2 tsp salt
  • 1/2 tsp almond extract
  • 3/4 c white sugar
  • 3/4 c confectioners' sugar
  • 1 (16 oz) can whole cranberry sauce
  • 1 tbsp warm water
  • 2 c all-purpose flour

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease & flour one 9 inch tube pan.
  • Step #3 Cream butter or margarine adding sugar slowly.
  • Step #4 Add eggs one at time.
  • Step #5 Beating with an electric mixture on medium speed.
  • Step #6 Mix together flour, baking powder, baking soda, & salt.
  • Step #7 With electric beaters on lowish speed add flour mixture alternately with sour cream to butter mixture, ending with flour mix (do not overbeat).
  • Step #8 Stir in 1 tsp of almond extract.
  • Step #9 Put a layer of half the batter in the pan the bottom of the pan, than a layer of whole cranberry sauce (1/2 the can).
  • Step #10 Repeat once more with the remaining batter & cranberry sauce.
  • Step #11 Sprinkle top slivered almonds on top.
  • Step #12 Bake at 350 degrees F (175 degrees C) for 50 mins.
  • Step #13 Remove from pan after slightly cooling.
  • Step #14 Drizzle glaze on top.
  • Step #15 To Make Glaze: Mix together confectioners' sugar, warm water, & 1/2 tsp almond extract.
  • Step #16 Drizzle over top of cake.
