Date-berry Sweet Couscous Tart Recipe

Ingredients
  • 1/2 tsp vanilla .
  • 1 tbsp brown sugar (packed) .
  • CRUST .
  • 1 tsp cinnamon .
  • 15 dates .
  • 3 eggs (beaten lightly) .
  • 1 1/4 c all-purpose flour .
  • 1 tbsp cornstarch .
  • 1/4 c pistachios (sliced fine) .
  • 3/4 c powdered sugar .
  • 1 (10 oz) box couscous .
  • 1/2 c butter (room temperature) .
  • FILLING .
  • 2 c strawberries, roughly sliced .
  • 1/2 egg (beat one egg & use half here & the other half in the filling) .
  • 1/4 c heavy cream .
  • 2 c orange juice (divided) .
  • 1 tbsp butter .
  • 2 tbsps bittersweet chocolate (ground, sliced, or slivered) .
  • 1/4 c plain yogurt .
  • 2 c water (divided)

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Butter pan lightly.
  • Step #3 CRUST:.
  • Step #4 Cream butter & sugar together.
  • Step #5 Add vanilla & egg, beat for 2 mins with electric beater on medium.
  • Step #6 Slowly add flour & mix well.
  • Step #7 Stir in pistachios.
  • Step #8 Press into tart pan & up sides.
  • Step #9 I had about 1/2 c too much & just put into muffin tins.
  • Step #10 FILLING:.
  • Step #11 Using a medium pan, put in 1 c orange juice, 1 c water & 1 tbsp butter.
  • Step #12 Bring just to boil & stir in the couscous.
  • Step #13 Cover up, remove this from heat for 5 mins.
  • Step #14 Put in large bowl, fluff up with a fork, & allow this to cool.
  • Step #15 Remove seeds from dates.
  • Step #16 Put dates in small pan & cover with 1 c orange juice & 1 c water.
  • Step #17 Simmer for 20 mins, remove any loose skins, allow this to cool, chop fine (or mash), drain, put in separate bowl.
  • Step #18 Add brown sugar, cinnamon, eggs & yogurt.
  • Step #19 Mix corn starch in cream & add to bowl.
  • Step #20 Mix all together until well mixed.
  • Step #21 Pour into couscous & mix well.
  • Step #22 Stir in strawberries.
  • Step #23 Pour into crust & bake for 20 - 25 mins, untill crust is golden brown.
  • Step #24 Sprinkle top top this with chocolate & bake another 5 mins.
  • Step #25 Cool & put in the fridge.
  • Step #26 Serve cold.
