Ingredients
  • 1 (8 oz) container sliced mushrooms .
  • 1 (14 1/2 oz) can Italian-style sliced tomatoes (drained) .
  • 1 lb boneless chicken breasts .
  • 2 (16 oz) jars alfredo sauce (I use 'light' alfredo sauce to cut a few calories) .
  • 1 (8 oz) can tomato sauce .
  • 1 (8 oz) box frozen sliced spinach .
  • parmesan cheese (optional) .
  • red pepper flakes .
  • 1 (1 lb) box penne pasta

Directions
  • Step #1 1.
  • Step #2 Fill a medium size pot with water & add red pepper flakes, bring to boil & penne noodles.
  • Step #3 2.
  • Step #4 Cut chicken into pieces & cook thorougly.
  • Step #5 Set aside & keep warm.
  • Step #6 3.
  • Step #7 Sautee mushrooms.
  • Step #8 4.
  • Step #9 Unthaw spinach & drain out all excess water.
  • Step #10 5.
  • Step #11 In a large saucepan mix alfredo sauce, tomato sauce, tomatoes, mushrooms, spinach & more red pepper flakes (to taste).
  • Step #12 Simmer on low for 15-20 min.
  • Step #13 6.
  • Step #14 Drain pasta & place this In a large-ish serving bowl.
  • Step #15 7.
  • Step #16 Add chicken to pasta & stir.
  • Step #17 8.
  • Step #18 Add sauce & stir.
  • Step #19 9.
  • Step #20 Serve as soon as possible & sprinkle with parmesean cheese & extra red pepper flakes if desired.
