Ingredients
  • 1 c sugar .
  • 3/4 c vegetable oil (or combo yogurt, applesauce, fat-free mayo etc.) .
  • 6 oz drained crushed pineapple .
  • 2 c shredded carrots .
  • 1/2 c low-fat buttermilk .
  • 1/2 c shredded coconut .
  • 1/2 tsp baking soda .
  • 2 tsps baking soda .
  • 1 c sliced pecans .
  • Glaze Ingredients .
  • 2 tsps cinnamon .
  • 3/4 c low-fat buttermilk .
  • 1/2 tsp salt .
  • 1/2 c butter or light butter .
  • Cake Ingredients .
  • 1/2 tsp baking soda .
  • 2 tsps vanilla .
  • 1 c sugar .
  • 1 tbsp corn syrup .
  • 1/2 c butter or light butter .
  • 3 large eggs (egg beaters are great) .
  • 2 c sugar .
  • 1/2 c low-fat buttermilk .
  • 2 c flour (white or healthier combo) .
  • 1/3 tbsp vanilla .
  • Frosting Ingredients

Directions
  • Step #1 Cake:.
  • Step #2 Mix flour, soda, cinnamon, & salt In a large-ish bowl.
  • Step #3 Beat eggs, coconut, sugar & vanilla; add to four mixture, oil, add pineapple, buttermilk, pecans & carrots; stir well.
  • Step #4 Grease & flour 9 x 13 cake pan.
  • Step #5 Pour in batter & bake this at 350° for 50-55 mins or until tests done.
  • Step #6 Glaze:.
  • Step #7 Mix all but vanilla in saucepan, bring to a boil.
  • Step #8 Cook for 5 mins stirring often.
  • Step #9 Remove from heat, stir in the vanilla.
  • Step #10 Poke holes in warm cake every two inches.
  • Step #11 Pour glaze over cake & cool cake until syrup is absorbed.
  • Step #12 Frosting:.
  • Step #13 Combine & beat until smooth.
