Halloumi Wrapped In Red Pepper With Lemon And Chilli Recipe

Ingredients
  • 4 red peppers, roasted whole until softened .
  • 1 red chili, finely sliced .
  • 1 lemon, juice & zest of .
  • 2 tsps fresh oregano or 1 tsp dried oregano .
  • 200 g halloumi cheese, sliced into 4 pieces .
  • 4 olives, cut into slivers

Directions
  • Step #1 Skin the peppers if you prefer them that way, although this is not necessary if you can't be bothered.
  • Step #2 Open out each grilled pepper by making a cut down one side & trim the tops & bottoms off so you have a strip.
  • Step #3 Sprinkle top over some lemon zest & juice, divide the chilli, oregano & olives between them.
  • Step #4 Place the halloumi on the pepper & roll the pepper around the cheese.
  • Step #5 Secure with a cocktail stick & press down with the palm of your hand so they flatten slightly.
  • Step #6 Heat the barbeque & cook the peppers on both sides for 5 mins or until they start to char & the cheese is softening & browning at the ends.
  • Step #7 You can do this inside on a griddled frying pan or under your oven grill as well.
