Cake Aux Courgettes Aux Pignons - Zucchini Bread With Pine Nuts Recipe

Ingredients
  • 10 oz zucchini (about 3 small zucchini) .
  • 1 tsp salt .
  • 2/3 c pine nuts, lightly toasted .
  • 4 eggs .
  • 10 tbsps butter, melted .
  • 2 c unbleached all-purpose flour .
  • 1 tsp vanilla extract .
  • 1 c sugar .
  • 1 1/2 tsps baking powder

Directions
  • Step #1 Preheat the oven to 425ºF.
  • Step #2 Gently squeeze the grated zucchini dry with paper towels.
  • Step #3 Put the eggs, melted butter, sugar & vanilla into a food processor/blender & pulse until they are well-mixed.
  • Step #4 In a bowl, mix the flour, salt & baking powder.
  • Step #5 Add this to the egg mixture in the food processor/blender & process until the mixture is smooth.
  • Step #6 Pour the mixture into a bowl & stir in the the zucchini & pine nuts.
  • Step #7 Butter a loaf pan & fill it with the batter, smooth the top & place the loaf pan in the oven & bake for 10 mins.
  • Step #8 Lower the oven temperature to 350ºF & bake for an extra 60 mins.
  • Step #9 To serve: Unmold the cake onto a cooling rack & allow it to cool to about room temp before serving.
