Garden Potato And Green Bean Salad Du Jardin Recipe

Ingredients
  • 2 lbs red potatoes, scrubbed & cut into 1 1/2 inch pieces .
  • 2 tbsps salt .
  • 1/4 c sliced fresh parsley .
  • 1 small shallot, minced .
  • 1 tbsp orange zest .
  • 2 tbsps sliced tarragon .
  • 2 tbsps sliced chives .
  • 1/2 c extra virgin olive oil .
  • 2 tbsps white wine vinegar .
  • 1/2 tsp pepper .
  • 8 oz green beans, ends trimmed & cut into 1 1/2 inch pieces .
  • 1 1/2 tbsps Dijon mustard .
  • 1 tbsp orange juice

Directions
  • Step #1 Whisk oil, vinegar, orange juice, shallot, mustard, orange zest & pepper.
  • Step #2 Reserve 1/4 c dressing in measuring c.
  • Step #3 Bring 6 c water to a boil in large sauce pan.
  • Step #4 Add green beans & salt.
  • Step #5 Cook uncovered, until green beans are slightly tender but still crisp, about 4 mins.
  • Step #6 Using slotted spoon, transfer beans to plate lined with paper towels to drain briefly, then add to bowl with dressing.
  • Step #7 Toss to coat.
  • Step #8 Add potatoes to still simmering water.
  • Step #9 Bring back to a boil & cook this until paring knife can be inserted into potatoes with no resistance, 7 to 10 mins.
  • Step #10 Using slotted spoons transfer potatoes to colander & drain briefly.
  • Step #11 Add hot potatoes to bowl with beans & dressing.
  • Step #12 Add parsley, chives & tarragon & reserved dressing to bowl.
  • Step #13 Toss carefully to mix & serve.
