Greek Eggplant Dip Melitzanosalata
Ingredients
  • 1 onion, finely sliced .
  • 200 g mayonnaise .
  • 1 green pepper, finely sliced .
  • 500 g eggplants

Directions
  • Step #1 Wash the eggplants, prick them with a fork & squeeze them out.
  • Step #2 Bake them in a hot oven until they're soft.
  • Step #3 Remove seeds & peel of the eggplant & puree it.
  • Step #4 Mix with the onion, the pepper & the mayonnaise.
  • Step #5 Serve chilled.
