Ratatouille Lasagna Recipe

Ingredients
  • 4 zucchini, thickly sliced lengthwise .
  • 2 white onions, cut into wedges .
  • 1 red capsicum, quartered & seeded .
  • 6 garlic cloves, unpeeled .
  • 1 yellow capsicum, quartered & seeded .
  • 8 sheets instant lasagna noodles .
  • 1 tbsp fresh rosemary .
  • 4 roma tomatoes, halved .
  • 2 tbsps olive oil

Directions
  • Step #1 Place first 6 ingredients into baking dish.
  • Step #2 Sprinkle top with oil & rosemary.
  • Step #3 Bake in moderate oven (180 C) for 50 mins.
  • Step #4 Cook lasagne according to packet instructions.
  • Step #5 Drain to serve.
  • Step #6 To serve layer lasagne & baked vegetable onto serving plates & drizzle with pan juices.
  • Step #7 If you have balsamic glaze available drizzle a tiny amount around the plate.
