Step #1 Set aside 1/2 pint of the strawberries & thinly slice the rest.
Step #2 Place the sliced strawberries In a large-ish saucepan & add the water, ginger, lemongrass, mint & sugar, & bring to a boil, orange juice, stirring every once in awhile.
Step #3 Reduce the heat to low & let simmer for five mins.
Step #4 Remove from heat & set aside to steep for an hr.
Step #5 After steeping, strain the strawberry mixture through a fine seive, mashing the strawberries to get the maximum strained liquid.
Step #6 Discard the solids.
Step #7 Cover up & put in the fridge the liquid--your strawberry soup--until well chilled--at least two hrs.
Step #8 Meanwhile, place this in a small bowl, cut the reserved 1/2 pint of strawberries into 1/4" dice, cover & put in the fridge.
Step #9 When ready to serve, pour the chilled soup around the berriess, place a small mound of sliced strawberries in the center of each shallow soup plate or bowl, & serve.
Step #10 Note 1: You can, if you wish, serve this with a scoop of vanilla ice cream.
Step #11 Note 2: You can mix 1/2 c of the soup with 1/2 c of champagne for a lovely summer cocktail or with 1/2 c of sparkling water for a non-alcoholic version.
