Mama's Famous Foccacia With Gorgonzola Topping Recipe

Ingredients
  • 1 1/4 c warm water .
  • fresh ground pepper .
  • 3 1/2-4 c flour .
  • Topping .
  • 2 1/2 tsps salt .
  • olive oil, for brushing .
  • 1/2 tsp rosemary, sliced .
  • 1 tbsp dry active yeast .
  • 1/2 lb gorgonzola .
  • 1/4 c cream .
  • Focaccia .
  • 1/4 c olive oil

Directions
  • Step #1 Focaccia:.
  • Step #2 Stir the yeast into the warm water In a large-ish bowl: let this stand for 10 mins.
  • Step #3 Stir in the olive oil, the flour & salt.
  • Step #4 Knead on a lightly floured surface until smooth & elastic about 5 mins.
  • Step #5 Place the dough in an oiled bowl & cover with plastic wrap.
  • Step #6 Let rise until double in size, about 1 1/2 hrs.
  • Step #7 Flatten & stretch the dough to cover as much the bottom of a 12 by 17 inch baking sheet.
  • Step #8 Dimple the dough with your fingertips.
  • Step #9 Topping:.
  • Step #10 Mix the cream, gorgonzola cheese & rosemary in a food processor/blender.
  • Step #11 Spread the mixture over the dough with a rubber spatula.
  • Step #12 Spice up with freshly ground black pepper.
  • Step #13 Brush the top this with olive oil & let rise for 1 hr.
  • Step #14 Preheat the oven to 400.
  • Step #15 Bake for about 20 mins.
  • Step #16 Unmold as soon as possible & serve warm or room temperature.
