Italian-style Chicken Breasts
Ingredients
5 tbsps butter, 3 of them at about room temp .
1/2 c grated parmesan cheese .
2 tbsps cooking oil .
2 slices good-quality white bread, crusts removed .
1/4 tsp fresh ground black pepper .
1 lb ground chicken .
salt, to taste (optional) .
1 egg .
1/4 c half-and-half .
1/2 c dry breadcrumbs
Directions
Step #1 Break the bread into pieces.
Step #2 In a large bowl, soak the bread in the half-and-half until the liquid is absorbed, about 2 mins.
Step #3 Mix in the chicken, salt (if any), egg, pepper, & the 3 tbsps room-temperature butter.
Step #4 Put in the freezer for about 10 mins to firm up.
Step #5 Remove the chicken mixture from the freezer; it will still be very soft.
Step #6 Form the mixture into four oval cutlets.
Step #7 Mix the parm & bread crumbs in a small bowl & coat the cutlets with the bread crumb mixture.
Step #8 In a large, nonstick frying pan, heat the remaining 2 tbsps butter & the oil over moderate heat.
Step #9 Cook the cutlets until golden brown & just done, 4 to 5 mins per side.
