Double Crust Bean Pie Recipe

Ingredients
  • 1/4 tsp cayenne pepper
  • 1 tbsp vegetable oil
  • 3/4 tsp chili powder
  • 1 small green bell pepper, sliced
  • 1/4 tsp ground black pepper
  • 1 1/2 c shredded Cheddar cheese
  • 1/4 c sliced red bell pepper
  • 1 (15 oz) can black beans, drained
  • 1 onion, finely sliced
  • 1/3 c salsa
  • 2 (9 inch) unbaked 9 inch pie crusts

Directions
  • Step #1 Preheat oven to 325F degrees F (165 degrees C).
  • Step #2 Heat oil in a medium saucepan over med-heat/flame.
  • Step #3 Saute onion & green pepper until tender.
  • Step #4 Sir in beans, chili powder, salsa, red bell pepper, cayenne & black pepper.
  • Step #5 Reduce heat to low & let simmer for 15 mins.
  • Step #6 Spoon half of the mixture into one of the pie crusts & cover with half of the cheese.
  • Step #7 Repeat with remaining beans & cheese.
  • Step #8 Top with remaining crust.
  • Step #9 Bake in preheated oven for 1 hr.
