Twice Baked Sweet Potatoes Recipe

Step #1 Preheat oven to 400F degrees.
Step #2 Bake potatoes until just softened, about 1 hr.
Step #3 Cool 15 mins.
Step #4 Cut a half inch off of tops of potatoes & scoop out pulp leaving shells intact.
Step #5 Mash pulp.
Step #6 Set aside 4 shells & toss out the other two.
Step #7 In a small skillet, melt butter.
Step #8 Add onion, cook this until softened about 8 mins.
Step #9 Add brown sugar, cumin, pepper, zest, cinnamon, salt, & allspice.
Step #10 Cook until sugar melts about 2-3 mins.
Step #11 Combine onion mixture with mashed sweet potatoes.
Step #12 Stir in sour cream & parsely.
Step #13 In a seperate bowl, mix egg whites at high speed until soft peaks form.
Step #14 Gently fold into sweet potato mixture.
Step #15 Spoon back into Potato shells.
Step #16 Put on baking sheet & bake this until filling is just set & tops begin to brown about 15-20 mins.
