Croatian Mushroom-stuffed Tomatoes Recipe

Ingredients
  • 1/4 c sliced fresh parsley .
  • 1 tsp dried marjoram .
  • 1/4 c grated sharp cheddar cheese .
  • 2 tbsps flour .
  • 1/4 c breadcrumbs .
  • fresh ground black pepper .
  • 1 small onion, sliced .
  • 2 eggs, well beaten .
  • 1 lb mushrooms, sliced .
  • 2 tbsps vegetable oil .
  • 1/4 tsp salt .
  • 6 medium ripe tomatoes .
  • 1 tbsp sweet Hungarian paprika

Directions
  • Step #1 With a sharp knife, cut a small hole in the stem end of each tomato & carefully scoop out most of the tomato pulp with a tsp.
  • Step #2 In a medium skillet, saute the onions in oil until translucent.
  • Step #3 Add the mushrooms, seasonings & herbs.
  • Step #4 Saute, & then simmer until liquid is reduced, stirring every once in awhile until the mushrooms release their juice, about 5-8 mins.
  • Step #5 Sprinkle top with the flour & stir well.
  • Step #6 Mix in the eggs to coat the mushrooms & cook for a few more mins.
  • Step #7 Preheat oven to 400°F.
  • Step #8 Spice up the inside of the hollowed tomatoes with salt & pepper to help the tomatoes retain their shape.
  • Step #9 Stuff the tomatoes with the mushroom mixture & place them in a buttered 9X13 baking pan.
  • Step #10 Combine the grated cheese & bread crumbs.
  • Step #11 Top each tomato with about 1 1/2 Tbsp of this mixture.
  • Step #12 Add 1/2 c water to the bottom of the baking pan & bake the tomatoes, covered, for 20 mins.
  • Step #13 Uncover, & bake for another 5 mins until cheese is slightly browned.
