Popeye Chicken Salad Recipe

Ingredients
  • 1 (8 oz) can water chestnuts, rinsed, drained, & sliced .
  • 3-4 green onions, sliced .
  • 1/4 c ketchup .
  • 2 1/2 c cubed cooked chicken .
  • 4 hard-boiled eggs, peeled & sliced .
  • Dressing .
  • 1 c fresh bean sprouts, rinsed & dried .
  • 3/4 lb fresh spinach, washed, dried, & torn (or 10 oz. bag spinach leaves or two 6 oz. bags baby spinach leaves) .
  • 1/4 c balsamic vinegar .
  • 1/2 c vegetable oil .
  • 1/3 c sugar .
  • 4 slices bacon, cooked until crisp, drained & crumbled

Directions
  • Step #1 Add the chicken, bean sprouts, spinach, green onion, crumbled bacon & sliced eggs In a large-ish bowl (if not serving right away, water chestnuts, may store undressed but covered salad in the refrigerator for up to 4 hrs).
  • Step #2 To make the dressing--In a small bowl, mix together the oil, vinegar, sugar, & ketchup using a whisk.
  • Step #3 Pour some of the dressing over the salad ingredients (you may not need all the dressing).
  • Step #4 Toss the salad carefully but until thoroughly coated.
  • Step #5 Add more dressing if needed; serve.
