Roast Chicken With Plantains And Onions Recipe

Ingredients
  • 6 garlic cloves, sliced .
  • 1 tbsp hot paprika or smoked paprika .
  • 1/2 c chicken broth or white wine .
  • 3/4 tsp pepper, fresh ground (divided) .
  • 3 onions, sliced .
  • 2 large ripe plantains, peeled & sliced .
  • 1 tbsp vegetable oil .
  • 1 1/2 tsps ground cumin .
  • 3 lbs chicken breasts, & thighs .
  • 1/2 tsp salt .
  • 2 limes, quartered

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 In small bowl, mix paprika, cumin, the salt & 1/2 tsp of the pepper.
  • Step #3 Rub over under the skin of the chicken breasts & thighs.
  • Step #4 In shallow Dutch oven, heat oil over medium-high heat.
  • Step #5 Place chicken pieces skin side down & cook 3-5 mins until chicken is browned.
  • Step #6 Transfer to plate.
  • Step #7 Using the same pan, brown the plantains, turning once, about 2 mins.
  • Step #8 Transfer to plate.
  • Step #9 Drain off any fat in pan.
  • Step #10 Add garlic, onions & remaining salt & pepper.
  • Step #11 Cook until onions are softened, 5 mins.
  • Step #12 Add broth or wine & bring to boil, scraping up brown bits from bottom of pan.
  • Step #13 Layer plantains on top of the onions.
  • Step #14 Arrange chicken & any accumulated juices on top.
  • Step #15 Bake in oven until juices run clear when chicken is pierced & skin is crispy, about 40 mins.
  • Step #16 Serve with lime wedges to squeeze over top.
