Jiffy Hollandaise Sauce Recipe

Ingredients
  • fresh ground black pepper, to taste .
  • 4 oz butter, melted (1 stick) .
  • 1 tbsp water .
  • salt, to taste (about 1/4 tsp) .
  • 3 egg yolks .
  • 1 tbsp lemon juice .
  • trace ground cumin (optional)

Directions
  • Step #1 Put the egg yolk in a mixer.
  • Step #2 Add the salt, pepper, & cumin if used.
  • Step #3 Do not turn on mixer yet.
  • Step #4 Add the lemon juice & water to the melted butter.
  • Step #5 Turn on the mixer, mixing the eggs for 30 seconds, then dribble the butter mixture into the mixer slowly in a very thin stream.
  • Step #6 Adjust seasonings & serve as soon as possible.
  • Step #7 You may also keep it hot in a double boiler over hot (never boiling) water until you need to serv it.
