Easy But Athentic Hollandaise Sauce
Ingredients
fresh ground black pepper, to taste .
4 oz butter, melted (1 stick) .
1 tbsp water .
salt, to taste (about 1/4 tsp) .
3 egg yolks .
1 tbsp lemon juice .
trace ground cumin (optional)
Directions
Step #1 Put the egg yolk in a mixer.
Step #2 Add the salt, pepper, & cumin if used.
Step #3 Do not turn on mixer yet.
Step #4 Add the lemon juice & water to the melted butter.
Step #5 Turn on the mixer, mixing the eggs for 30 seconds, then dribble the butter mixture into the mixer slowly in a very thin stream.
Step #6 Adjust seasonings & serve as soon as possible.
Step #7 You may also keep it hot in a double boiler over hot (never boiling) water until you need to serv it.
