Peach Pecan Pancakes Recipe

Ingredients
  • 1 tbsp baking powder .
  • 1/4 tsp salt .
  • 1 egg .
  • 1 egg white .
  • 2 tbsps sugar .
  • 2 c all-purpose flour .
  • 1/4 c sliced pecans .
  • 1 tbsp canola oil .
  • 2 large peaches .
  • 2 c skim milk or soy milk

Directions
  • Step #1 Sift together dry ingredients.
  • Step #2 In a separate bowl, beat eggs, oil, then beat in sugar, & milk.
  • Step #3 Stir liquid mixture into dry ingredients.
  • Step #4 Remove pits & dice peaches into 1/4-inch cubes.
  • Step #5 Gently fold peaches & pecans into batter.
  • Step #6 Preheat griddle, then spray with non-stick oil.
  • Step #7 Ladle pancake batter onto griddle to make 4-inch-round pancakes.
  • Step #8 Cook until bubbles form, then flip to cook other side.
  • Step #9 Serve as soon as possible with maple syrup of fruit sauce.
