Couscous Tabbouleh Recipe

Ingredients
  • 1 red bell pepper, slivered .
  • 3 tbsps olive oil .
  • 1 1/2 c dry couscous .
  • 2 c boiling water .
  • salt & pepper .
  • 1 tbsp olive oil .
  • 4 scallions, finely sliced .
  • 1 c small-sprigged fresh parsley, patted dry & coarsely sliced .
  • 2 tbsps freshly strained lemon juice .
  • 2 tbsps capers .
  • 1/2 c fresh mint leaves (optional) .
  • 2 medium tomatoes, sliced .
  • 1 tsp vegetable stock powder .
  • 1/3 c shelled pistachios

Directions
  • Step #1 Place the couscous in a bowl.
  • Step #2 Mix with the 1 tbsp olive oil & 1 tsp vegetable stock powder.
  • Step #3 Add the boiling water & mix to mix.
  • Step #4 Cover up the bowl with some plastic wrap & set aside for 10 mins.
  • Step #5 After all the liquid has been absorbed, uncover the couscous & fluff with a fork.
  • Step #6 Add the lemon juice, the 3 tbsps olive oil, & the salt & pepper to taste to the fluffed couscous.
  • Step #7 Add the tomatoes, red pepper, scallions & capers.
  • Step #8 Toss to mix.
  • Step #9 Lightly stir in the the parsley, optional mint leaves, & the pistachios.
  • Step #10 Taste & adjust for seasoning.
  • Step #11 Serve cool or at about room temp.
