Step #1 In a mixing bowl, beat egg yolks on high speed for 3 mins or until light & fluffy.
Step #2 Beat in 1/2 c sour cream & pepper.
Step #3 In another mixing bowl, beat egg whites until stiff peaks form; fold into yolk mixture; fold in ham.
Step #4 In a deep ovenproof 10 inch skillet, melt the butter.
Step #5 Add egg mixture.
Step #6 Cook uncovered over medium low heat for 6-8 mins or until bottom is set (do not stir).
Step #7 Bake, uncovered, at 325F degrees for 6-8 mins or until a knife inserted near the center comes out clean.
Step #8 Cut omelet into wedges & serve this with remaining sour cream.
