Step #1 Place the yeast In a large-ish mixing bowl.
Step #2 Mix in the warm water & honey & set aside in a warm spot for about 10 mins, or until the yeast is dissolved & begins bubbling.
Step #3 (If the yeast does not bubble it is probably dead.
Step #4 Begin again, using fresh yeast.
Step #5 ) Gradually sift the flour & salt into the yeast mixture, stirring constantly until the dough begins to pull away from the sides of the bowl.
Step #6 Sprinkle top some flour over a working surface & carefully knead the dough for several mins.
Step #7 Cut the dough in half & roll out one half into a rectangle (like a rectangular pizza) about 14 inches by 10 inches.
Step #8 Brush the dough with 1 1/2 tbsps of the olive oil.
Step #9 Scatter half the ham over the surface, pressing it carefully into the dough.
Step #10 Sprinkle top half the cheese on top & scatter half the herbs & a generous grinding of fresh black pepper over the dough.
Step #11 Using your hands, carefully roll the dough lengthwise, into the shape of a long cigar.
Step #12 Lightly seal the edges of the dough.
Step #13 Place in a well greased French bread pan (or on a well-greased cookie sheet) & cover with a clean tea towel.
Step #14 Make the second loaf.
Step #15 Preheat the oven to 450 degrees F.
Step #16 Place the two loaves of bread in a dry warm spot & let them sit, covered, for 15 mins.
Step #17 Just before baking, lightly brush the loaves with the remaining 1 tbsp of olive oil.
Step #18 Place in the middle shelf of the hot oven & bake 20 to 25 mins, or until the bread has a golden brown crust & sounds hollow when tapped on the bottom.
