Cold Or Hot Sweet Potato And Carrot Soup Recipe

Ingredients
  • 1/4 tsp orange zest .
  • 1 tbsp fresh ginger, sliced very fine .
  • 3 spring onions, garden fresh .
  • 1/2 tsp ground cloves or 1 whole clove .
  • 1/4 tsp ground mexican cinnamon .
  • 1 c soy milk, to consistancy .
  • 1 large sweet potato, peeled & sliced fine .
  • 1/8 tsp ground nutmeg or mace .
  • 1 1/2 c carrots, sliced, fresh, cooked .
  • 1 1/2 c vegetable stock, strong dark .
  • fat free parmesan or romano cheese (your choice) (optional) or soy cheese (optional) .
  • 1 1/2 tbsps maple pecan syrup or pure maple syrup

Directions
  • Step #1 Take 1/4 c of the broth & sautee the onions & ginger until tender adding the cloves, cinnamon & nutmeg.
  • Step #2 Add the sweet potato, cut fine to reduce cooking time.
  • Step #3 IF you haven't cooked the carrots with a bit of water & pepper add them now also again cut fine to reduce cooking time.
  • Step #4 Cook for about 8 to 10 mins or until the potatoes & carrots are soft.
  • Step #5 Remove from heat & mixerize.
  • Step #6 DO not stick your wooden spoon too far down in the mixer while running or you will ruin a perfectly good antique spoon & add fiber.
  • Step #7 This is called stupid at least for this cook.
  • Step #8 However it might add an extra flavor to the dish if the spoon is seasoned properly but NOT recommended.
  • Step #9 After pureeing, return to the saucepan & add the soy milk to consistancy.
  • Step #10 You will know when honest.
  • Step #11 You want a thick rich soup.
  • Step #12 Taste, add the orange zest then add the cheese, optional btw & taste again then add salt or pepper if you think you need them.
  • Step #13 Serve heated in winter or chill in summer.
