Creamy Pesto Chicken Recipe

Ingredients
  • 1/4 c pine nuts
  • 3 1/2 tbsps sherry
  • 4 large cloves garlic, sliced
  • 1 (8 oz) container reduced fat sour cream
  • 3 tbsps grated Parmesan cheese
  • 4 skinless, boneless chicken breast halves - cut into strips
  • 1 tbsp extra virgin olive oil
  • 1/2 c sliced fresh basil
  • ground black pepper to taste

Directions
  • Step #1 Heat the olive oil in a skillet over med-heat/flame, & cook the chicken for about 5 mins, until lightly browned.
  • Step #2 Mix the garlic & sherry into the skillet.
  • Step #3 Cook & stir until all the liquid has been reduced & the chicken is no longer pink & juices run clear.
  • Step #4 Mix the pine nuts into the skillet, & cook 2 to 3 mins over med-heat/flame.
  • Step #5 Reduce the heat to low, & mix in the basil, sour cream, Parmesan cheese, & pepper.
  • Step #6 Continue cooking until heated through.
