Peanut Butter Dandy Cake (chocolate Cake) Recipe

Ingredients
  • 3 eggs .
  • 3/4 c creamy peanut butter .
  • 3/4 c sour cream .
  • 1/2 tsp salt .
  • 1 c water .
  • 1 (12 oz) package semi-sweet chocolate chips (2 c) .
  • 2 c sugar .
  • 1 tsp baking soda .
  • 1 c butter (2 sticks or use 1 stick butter with 1/2 c shortening) .
  • 1/2 tsp vanilla .
  • Chocolate Glaze .
  • 1/3 c cocoa powder .
  • 2 c flour .
  • 2 tbsps shortening

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Grease & flour a 15 1/2"x10 1/2"x1" jelly roll pan.
  • Step #3 In a large bowl, baking soda, sift flour, sugar, & salt.
  • Step #4 In a small saucepan, mix water, butter, & cocoa.
  • Step #5 Warm over med-heat/flame, stirring every once in awhile, until mixture boils; boil & stir 1 min.
  • Step #6 Pour over flour mixture; beat just until mixed (batter will be thin).
  • Step #7 Add eggs, sour cream, & vanilla; beat until well mixed.
  • Step #8 Pour into jelly roll pan.
  • Step #9 Bake until cake tester inserted in center comes out clean (25-30 mins).
  • Step #10 Spread peanut butter over warm cake.
  • Step #11 Cool completely in pan on wire rack.
  • Step #12 Microwave chocolate chips & shortening in a small microwave-safe bowl, on HIGH for 1 1/2 mins; stir.
  • Step #13 If needed, stirring after each heating, microwave for an extra 15 seconds at a time, just until chocolate is melted.
  • Step #14 Carefully spread chocolate over top of peanut butter, covering it completely.
  • Step #15 Allow topping to set; cut into squares.
