Maple Pecan Fudge Recipe

Ingredients
  • 3/4 c pecans (sliced) .
  • 1/4 tsp baking soda .
  • 1 c whipping cream .
  • 1 tsp vanilla .
  • 2 c brown sugar (packed) .
  • 2 tbsps butter (cubed) .
  • 1/2 c pure maple syrup

Directions
  • Step #1 Line an 8 inch square baking dish with foil wrap, leave a 1 inch overhang.
  • Step #2 Grease foil wrap.
  • Step #3 Spread pecans on a baking sheet & toast in a 180C (350F) oven for 8 mins or until fragrant.
  • Step #4 Set aside.
  • Step #5 Grease the sides of a heavy saucepan.
  • Step #6 Add the sugar, cream, maple syrup, butter & baking soda.
  • Step #7 Cook over a medium heat, stirring with a wooden spoon until the sugar is dissolved & the mixture starts to boil.
  • Step #8 Boil without stirring until 1/2 tsp dropped into cold water forms a soft ball (or candy thermometer reaches 114C/238F) - approximately 8 mins.
  • Step #9 Pour into a wide-bottomed bowl & cool on rack until mixture is just warm to touch (1-2 hrs).
  • Step #10 Using a wooden spoon beat in the vanilla, beating until very thick & most of the gloss disappears (approx 7 mins).
  • Step #11 Quickly stir in the the pecans & scrape mixture into prepared pan.
  • Step #12 Smooth the top.
  • Step #13 Let cool then use remove this from pan & cut into pieces.
