Old Amish Cookbook Flannel Cakes Recipe

Ingredients
  • 2 tbsps melted butter .
  • 2 eggs, beaten .
  • 1/2 tsp salt .
  • 4 tsps baking powder .
  • 1 3/4 c milk .
  • 1 3/4 c flour .
  • 1 tsp sugar .
  • 1 tsp vanilla

Directions
  • Step #1 Mix dry ingredients & sift.
  • Step #2 Make a mound & place hole in the center.
  • Step #3 Add the liquid ingredients & mix well.
  • Step #4 Pour 1/4 c batter for one pancake.
  • Step #5 The consistency should be thin enough that you do not need to touch the batter once you pour it.
  • Step #6 This pancake will rise.
  • Step #7 Use the ingredients specified.
  • Step #8 Adjustment of other ingredients WILL change the taste but so far as I have noted not the texture.
  • Step #9 Use lard or bacon grease on the skillet or griddle.
  • Step #10 This is not a pam or oil recipe.
  • Step #11 If you must reduce the amount of grease wipe rapidly with a paper towel to remove.
  • Step #12 The skillet should be so hot a drop of water dances on it.
  • Step #13 IF you leave this overlong it will get a dark brown or black that means it browns rapidly.
  • Step #14 IT should bubble around the edges.
  • Step #15 Flip & watch the rise of the pancake to know when it is done.
  • Step #16 I suggest making a few small ones until you get the knack for this.
  • Step #17 Yes it is 4 tsp baking powder, no it is NOT a typo so don't ask.
  • Step #18 Yes it needs that.
  • Step #19 Serve with a pat of fresh butter & your favorite syrup.
