Coconut Pound Cake Recipe

Ingredients
  • 1 1/2 tsps baking powder
  • 2 c all-purpose flour
  • 1 c butter
  • 1 tsp coconut extract
  • 1 c white sugar
  • 3 1/2 oz flaked coconut
  • 1/2 c milk
  • 2 c white sugar
  • 1/4 c water
  • 1 tsp coconut extract
  • 1/2 c sliced walnuts
  • 5 eggs

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease & flour a 10 inch tube pan.
  • Step #3 In a large bowl, cream together 2 c sugar & the butter.
  • Step #4 Fold in the eggs one at a time, fully incorporating each one before adding another.
  • Step #5 In separate bowl, flaked coconut, mix the flour, milk, baking powder, & 1 tsp coconut extract.
  • Step #6 Beat into the creamed mixture.
  • Step #7 Pour the batter into the prepared pan.
  • Step #8 Bake 1 hr in the preheated oven, or until a knife inserted in the center comes out clean.
  • Step #9 Cool on a wire rack for just a few mins, then place on cake platter.
  • Step #10 To make the glaze, water, mix together in a small saucepan 1 c sugar, 1 tsp coconut extract, & walnuts.
  • Step #11 Boil for 1 min, & pour over still warm cake.
