Spiced Turkey Cutlets Recipe

Ingredients
  • 8 (2 oz) turkey cutlets (each should weigh 2 oz.) .
  • 1 c fat free chicken broth .
  • 1/2 tsp salt .
  • 1/4 tsp black pepper .
  • 1 tsp allspice .
  • 1 tbsp brown sugar .
  • 1/2 tsp cinnamon .
  • 1/4 c raisins .
  • 1/2 c sliced green onions .
  • 1 tbsp vegetable oil .
  • 1 medium red bell pepper, cut into 1/4-inch slices .
  • 1/2 tsp cumin

Directions
  • Step #1 Let the vegetable oil get heated In a large-ish nonstick skillet over medium-high heat.
  • Step #2 Sprinkle top turkey cutlets w/ salt & pepper.
  • Step #3 Place cutlets in pan; cook 3 1/2 mins on each side or until done.
  • Step #4 Remove cutlets from pan & keep warm.
  • Step #5 Add in onions & bell pepper to skillet; stir/saute for 2 mins.
  • Step #6 Add in remaining ingredients; bring to a boil, cook this until reduced to 1 c (about 3 mins).
  • Step #7 Serve sauce with turkey; couscous goes well with this.
