Italian Glazed Lemon Rings Recipe

Ingredients
  • 1 1/4 c sweet butter, sliced at about room temp .
  • 2 tbsps limon cello liqueur or lemon syrup .
  • 1 1/2 tbsps milk .
  • 1/2 finely grated lemon, rind of .
  • 1/4 c caster sugar (superfine) .
  • 1 tbsp sliced candied angelica .
  • 1 egg, beaten .
  • 1 1/4 c sifted confectioners' sugar .
  • 1 3/4 c self rising flour

Directions
  • Step #1 Preheat over to 350.
  • Step #2 Line 2 baking sheets with parchment paper.
  • Step #3 Place flour into mixing bowl & rub in the butter.
  • Step #4 Put milk, caster sugar, & lemon rind in a small sauce pan.
  • Step #5 Stir over low heat/flame until sugar dissolves.
  • Step #6 Add to the flour mixture, together with the egg.
  • Step #7 Mix well.
  • Step #8 Knead lightly until smooth.
  • Step #9 Roll walnut size pieces of dough into strands about 6 inches.
  • Step #10 Twist 2 strands together & join ends to make a circle.
  • Step #11 Place on baking sheets & bake for 15-20 mins until golden.
  • Step #12 For topping, stir the icing sugar & liqueur together.
  • Step #13 Dip the top of each cookie into the topping.
  • Step #14 Sprinkle top with angelica.
