Fiesta Chicken Recipe

Ingredients
  • 1/3 c flour .
  • 2 tbsps butter .
  • 1/4 c white wine .
  • 1/2 c chicken broth .
  • 2 tbsps olive oil .
  • 1/8 tsp cayenne pepper .
  • 1 tbsp parsley, sliced .
  • salt & pepper .
  • 1/4 tsp rosemary, chop .
  • 1 red bell pepper, thinly sliced .
  • 1 onion, sliced thin .
  • 1/8 tsp thyme, crumbled .
  • 4 boneless chicken breast halves .
  • 2 garlic cloves, minced .
  • 1/4 tsp garlic powder .
  • 10 mushrooms, quartered

Directions
  • Step #1 In a skillet melt butter & oil together.
  • Step #2 Add garlic, red bell peppers,onion & mushrooms.
  • Step #3 Sautee until veggies are tender.
  • Step #4 Remove to bowl & set aside.
  • Step #5 In a bowl mix flour, cayenne, garlic powder, salt & pepper.
  • Step #6 Mix well.
  • Step #7 Coat chicken, on both sides, with flour mixture.
  • Step #8 Shake off excess.
  • Step #9 In skillet (with garlic juices) add chicken & brown on each side.
  • Step #10 About 3 mins per side.
  • Step #11 Return veggies to skillet with chicken.
  • Step #12 Add broth, wine, rosemary, thume & parsley.
  • Step #13 Bring to a boil & cook 5 mins or until chicken is done & some liquid is evaporated.
  • Step #14 Serve.
