1 lb skinless, boneless chicken breast meat - cubed
1 yellow bell pepper, cut into large chunks
1 clove garlic, minced
1 green bell pepper, cut into large chunks
1/4 c pitted black olives
1 1/2 tsps ground cumin
4 green onions, sliced
1 c couscous
2 c chicken broth
1/2 c dry white wine
2 tsps olive oil
1 red bell pepper, cut into large chunks
2 tbsps fresh lime juice

Step #1
Prepare couscous pasta according to package directions, using chicken broth for liquid.
Step #2 Drain & set aside.
Step #3 In a large skillet mix the wine, 1 tbsp lime juice, oil, 1 tsp cumin & garlic; mix all together & add chicken.
Step #4 Simmer over low heat/flame until all liquid has evaporated & chicken juices run clear, 5 to 7 mins.
Step #5 Remove chicken from skillet & mix in a large bowl with remaining 1 tbsp lime juice, yellow bell pepper, green bell pepper, red bell pepper, remaining 1/2 tsp cumin, green onion & couscous.
Step #6 Garnish with a few black olives per serving.
