Chicken Penne Alfredo Recipe

Ingredients
  • 1/2 c butter or margarine .
  • 3 chicken breast halves, cut into bite size chunks .
  • 1 small onion, sliced into strips .
  • 1 c heavy cream .
  • 3/4 c fresh basil leaves, coarsly sliced .
  • 2 medium red bell peppers, sliced into strips .
  • 1/2-3/4 c parmesan cheese .
  • 3 tbsps olive oil, divided .
  • 2 tbsps cream cheese .
  • 1 (5 oz) can sliced mushrooms, drained .
  • For the Sauce .
  • 1/2 c pine nuts .
  • 1/2 c sliced fresh parsley or 1 tbsp dried parsley .
  • 10 black olives, sliced .
  • 1 tsp red pepper flakes (optional) .
  • 1 tsp garlic powder .
  • 1/2 lb penne rigate, unkcooked

Directions
  • Step #1 Cook pasta according to package directions.
  • Step #2 Manwhile, make sauce.
  • Step #3 Melt butter, heavy cream & cream cheese.
  • Step #4 Add parmesan cheese & garlic powder.
  • Step #5 Simmer for 15 to 20 mins over low heat/flame.
  • Step #6 Heat 1 tbs olive oil & toast pine nuts until golden brown.
  • Step #7 Drain on paper towel & set aside.
  • Step #8 Add remaining oil to the pan & saute onions for 2 mins.
  • Step #9 Add red peppers & pepper flakes & saute until onions are translucent.
  • Step #10 Add chicken pieces.
  • Step #11 saute until chicken is cooked through.
  • Step #12 Add Mushrooms, olives, basil & parsley.
  • Step #13 Stir in sauce & pine nuts.
  • Step #14 Drain Pasta, & stir in theto mixture.
  • Step #15 Let simmer for a few mins.
