French Provencale Ratatouille Recipe

Ingredients
  • 1 garlic clove, sliced .
  • 1 tbsp red wine vinegar .
  • 1 red capsicum, seeded & cut into 1 . 5cm dice .
  • 1/4 c vegetable stock .
  • 1 tbsp flat leaf parsley, sliced .
  • 1-2 tbsp French mustard .
  • 2 medium tomatoes, deseeded & cut into 1 . 5cm dice .
  • 1 onion, sliced .
  • salt & pepper .
  • 1 tbsp olive oil .
  • 2 medium eggplants, salted rinsed & cut into 1 . 5cm dice .
  • 2 medium zucchini, halved & cut into 1 . 5cm dice

Directions
  • Step #1 Heat olive oil in frying pan.
  • Step #2 Saute onion for 2 mins.
  • Step #3 Add garlic & cook 1 min.
  • Step #4 Add eggplant & capsicum & cook 5 mins.
  • Step #5 Add zucchini, tomatoes, vinegar & stock.
  • Step #6 Spice up, reduce heat to slow simmer & cover.
  • Step #7 Cook 15-20 mins.
  • Step #8 Just before serving stir through mustard (as much as you like) & sliced parsley & extra seasoning if desired.
