Tuscany Chicken And Orzo With Bean Dressing Recipe

Ingredients
  • 1 rosemary sprig .
  • 1 tomato (sliced) .
  • 4 chicken breasts or chicken pieces .
  • 3 garlic cloves .
  • 1 bay leaf .
  • 1 lemon, juice of, only .
  • 1 c white wine .
  • 1 c zucchini (sliced) .
  • 2 tbsps spaghetti sauce .
  • 1 (16 oz) can cannellini beans .
  • 1 c orzo pasta .
  • 1 tbsp italian seasoning .
  • 1 c chicken broth .
  • 1 3/4 c chicken broth

Directions
  • Step #1 Mix chicken through Italian seasoning in a dish & let marinate overnight.
  • Step #2 Dice the zucchini & tomato, then mix them together.
  • Step #3 Store these in the refrigerator overnight too.
  • Step #4 Preheat oven to 350.
  • Step #5 Heat a fry pan on the stove top on high till hot, then turn the heat down to medium high.
  • Step #6 Remove chicken from marinade (but keep the liquid), salt & pepper both sides of the meat & sear the chicken in the fry pan till brown, about 3 mins per side.
  • Step #7 Place the browned chicken on a greased baking sheet (which has a rim to catch the chicken juices).
  • Step #8 Mix the orzo, sliced tomato, sliced zucchini, & 1.
  • Step #9 75 c chicken broth in a casserole, (I use a loaf pan).
  • Step #10 Cover up tightly with foil wrap.
  • Step #11 Place the chicken & the orzo in the oven.
  • Step #12 Bake for 25 mins (if using chicken pieces, bake for 30 mins however the orzo will only needs 30 mins).
  • Step #13 Now back to the chicken marinade.
  • Step #14 Use the marinade to deglaze the fry pan.
  • Step #15 Drain & rinse the bean several times (to remove the salt).
  • Step #16 Add the beans, 2 tbs spaghetti sauce & 1 c of broth to the marinade in the fry pan, & let simmer till reduced by one third.
  • Step #17 When the sauce is reduced, remove the bay leaf & rosemary stem.
  • Step #18 When the chicken & orzo are cooked; its time to plate the food.
