Step #2 Spray 4 small, oven-proof bowls with cooking spray.
Step #3 In a saucepan over med-heat/flame, melt butter.
Step #4 Stir in 2 c chicken broth, slowly adding the remaining chicken broth until you have a smooth, & whisk in all of the flour, slightly thick base.
Step #5 Mix in onion flakes, bay leaf, hot pepper sauce, thyme, pepper, & carrots.
Step #6 Cook about 5 mins.
Step #7 Stir in potatoes & chicken, & cook for another 5 mins.
Step #8 In the bottom of each prepared bowl, place a slice of Swiss cheese.
Step #9 Divide the chicken mixture equally into the four bowls, over the cheese.
Step #10 Place a puff pastry square over the top of each bowl, pressing lightly around the rim.
Step #11 Brush the pastry with the egg & water mixture.
Step #12 Place the four bowls on a baking sheet.
Step #13 Bake for about 25 mins, or until pastry is puffed & golden brown.
Step #14 Let rest at least 5 mins before serving.
