Chicken Pot Pies With Puff Pastry Recipe

Ingredients
  • 1 (8 oz) can white potatoes
  • 4 slices Swiss cheese
  • 4 c chicken broth
  • 1 sheet frozen puff pastry, cut into four squares
  • 1 tsp ground black pepper
  • 1/2 tsp dried thyme
  • 1 (8 oz) can carrots, drained
  • 1 tbsp water
  • 1 egg, beaten with
  • 1 dash hot pepper sauce
  • 1 bay leaf
  • 1/4 c dried onion flakes
  • 1/2 c unsalted butter
  • 1/2 c all-purpose flour
  • 2 c sliced cooked chicken

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 Spray 4 small, oven-proof bowls with cooking spray.
  • Step #3 In a saucepan over med-heat/flame, melt butter.
  • Step #4 Stir in 2 c chicken broth, slowly adding the remaining chicken broth until you have a smooth, & whisk in all of the flour, slightly thick base.
  • Step #5 Mix in onion flakes, bay leaf, hot pepper sauce, thyme, pepper, & carrots.
  • Step #6 Cook about 5 mins.
  • Step #7 Stir in potatoes & chicken, & cook for another 5 mins.
  • Step #8 In the bottom of each prepared bowl, place a slice of Swiss cheese.
  • Step #9 Divide the chicken mixture equally into the four bowls, over the cheese.
  • Step #10 Place a puff pastry square over the top of each bowl, pressing lightly around the rim.
  • Step #11 Brush the pastry with the egg & water mixture.
  • Step #12 Place the four bowls on a baking sheet.
  • Step #13 Bake for about 25 mins, or until pastry is puffed & golden brown.
  • Step #14 Let rest at least 5 mins before serving.
