Kittencal's Easy Sweet And Sour Pineapple Meatballs Recipe

Ingredients
  • 3 large carrots, sliced .
  • 2 (14 oz) cans pineapple chunks, drained & reserve juice .
  • 1 (350 ml) jar sweet & sour sauce (can be homemade) .
  • 3/4 c brown sugar, packed .
  • 2 lbs lean ground beef .
  • sugar, if needed .
  • 1/2 tsp salt .
  • 2 tbsps cornstarch (optional) .
  • 2 green bell peppers (sliced or coarsley sliced) .
  • 1/4 c cider vinegar (can use less) .
  • 1 (250 ml) jar Russian salad dressing (I use Kraft) .
  • 2 tbsps minced fresh garlic .
  • 1/4 c cold water (optional) .
  • oil (for frying) .
  • 1/4 c soy sauce .
  • pepper (optional)

Directions
  • Step #1 Prepare the ground beef into meatballs using your favorite recipe for meatballs, & shape into about 1-inch balls.
  • Step #2 Heat oil in a skillet, & brown the meatballs until no longer pink (you can also bake them in the oven) set aside.
  • Step #3 Drain the 2 cans of pineapple tidbits; set pineapple tidbits aside.
  • Step #4 If needed, add water to the juice to measure 2 c, & place this In a large-ish saucepan (if the juice from the cans measures more than 2 c add in all the juice with no water).
  • Step #5 To the juice/water mixture, sweet & sour sauce, garlic, stir in the vinegar, brown sugar & soy sauce, salad dressing, salt & pepper; bring to a simmer (adding more brown sugar (or white sugar) to taste if desired.
  • Step #6 When the sauce is to desired taste, add in the cooked meatballs & carrots.
  • Step #7 Simmer for about 25-30 mins, or until carrots are crisp-tender.
  • Step #8 Stir in green pepper, & reserved pineapple tidbits; cover & let simmer for about 10-15 mins longer, or until green pepper is crisp-tender (do not over cook the peppers!).
  • Step #9 This step is only optional if you prefer a thicker sauce, in a small bowl mix cornstarch & water until smooth, & stir in theto the meatball mixture.
  • Step #10 Bring to a boil; cook, stirring for about 2 mins, or until sauce has thickened.
  • Step #11 Serve over rice.
