Cranberry Cornmeal Cake Recipe

Ingredients
  • 3 tsps vanilla extract
  • 1 1/2 c fresh or frozen, thawed cranberries
  • 1 1/2 tsps baking powder
  • 2 eggs
  • 1 1/2 c packed brown sugar, divided
  • 3/4 c butter, softened, divided
  • 1/2 c golden raisins
  • 1/3 c cornmeal
  • 2/3 c milk
  • 1 1/4 c all-purpose flour

Directions
  • Step #1 Melt 1/4 c butter; pour this into an ungreased 9-in.
  • Step #2 round baking pan.
  • Step #3 Tilt to grease sides of pan.
  • Step #4 Sprinkle top with 3/4 c brown sugar.
  • Step #5 Top with cranberries & raisins; set aside.
  • Step #6 In a large mixing bowl, cream the remaining butter & brown sugar until light & fluffy.
  • Step #7 Add eggs, one at a time, beating well after each addition.
  • Step #8 Beat in vanilla.
  • Step #9 Combine the flour, cornmeal & baking powder; add to creamed mixture alternately with milk.
  • Step #10 Carefully spread over cranberries & raisins.
  • Step #11 Bake at 350 degrees F for 55-60 mins or until a toothpick inserted near the center of cake comes out clean.
  • Step #12 Cool for 10 mins before inverting onto a serving platter.
  • Step #13 Serve warm.
