10-12 dried chilies (or less if you dont want it to be too spicy) .
1/2 cm ginger, cut into thin slices .
50 g uncooked cashews .
1 tsp minced garlic .
1 dash salt & pepper
Directions
Step #1 Lightly season prawns with salt & pepper.
Step #2 Add cornflour & toss well together to mix.
Step #3 Set aside.
Step #4 Place wok over medium low heat & pour in oil.
Step #5 Add in raw cashew nut & slowly heat the oil ( cashewnuts will be fried at the same time the oil is being heated up) Fry cashewnuts till it turns lightly golden & dish out before it begins to turn dark brown.
Step #6 Drain from oil & set aside.
Step #7 heat the same oil in the wok until hot & deep fry the prawns for 2-3 mins.
Step #8 Remove & set aside.
Step #9 Put 2 tbsp oil in a clean wok & fry ginger & garlic until fragrant.
Step #10 Add onions & dried chillies.
Step #11 Fry for a min.
Step #12 Pour in the sauce ingredients & bring to a boil.
Step #13 Add in the prefried prawns to the wok.
Step #14 Mix briskly.
Step #15 Thicken sauce with the cornflour mixture & toss in the cashewnuts.
Step #16 Dish out & serve hot with rice.
