Hajar's Comfort Dessert Couscous Recipe

Ingredients
  • dates, snipped .
  • 5 c couscous, uncooked .
  • icing sugar .
  • 3/4 c olive oil or milk, i prefer milk though many use the oil both the olive oil & milk .
  • raisins .
  • prunes, snipped .
  • 1/4 tsp salt .
  • 2 tbsps vegetable oil .
  • cinnamon .
  • almonds, as required, any semi dried soaked fruits. Nuts. I use the .
  • 3 tsps cinnamon

Directions
  • Step #1 Cover up raw couscous with cold water & drain as soon as possible.
  • Step #2 Stir with a fork & let rest for 15 mins.
  • Step #3 Sprinkle top with the vegetable oil mix with 6 tb water along with the salt & cinnamon.
  • Step #4 Mix well using your hands until the liquid has been uniformly absorbed.
  • Step #5 Place couscous in the top of a coucousier & [place over boiling water.
  • Step #6 Steam for 30 mins & remove this from the heat.
  • Step #7 Return couscous to a bowl & mix in half the olive oil or milk using your hands.
  • Step #8 Allow to cool & then sprinkle with 3/4 c water.
  • Step #9 Mix well & set aside until it has absorbed all the water.
  • Step #10 Return to the couscousier & steam for another 15 mins.
  • Step #11 Return to the bowl, add half the remaining oil or milk & mix with your fingers.
  • Step #12 Steam again for another 30 mins.
  • Step #13 Return to the bowl for one last time & mix in the rest of the oil or milk or 1/2 milk & 1/2 oil.
  • Step #14 Arrange coucous in a cone shape on a large serving platter.
  • Step #15 Decorate attractively with the garnishes & serve while still hot.
  • Step #16 Great cold for breakfast as well! This is a make the couscous & the rest is garnish recipe.
  • Step #17 In my area, Oujda we prefer pistachios & will then add almonds to the pistachios if we have them.
