Easy...easy Albondigas Soup Recipe

Ingredients

1 onion, sliced .
3 (14 1/2 oz) cans chicken broth .
1/2 tsp salt .
2 (14 1/2 oz) cans stewed tomatoes .
1 1/2 c frozen corn .
1 tsp cumin .
1 carrot, thinly sliced .
sliced cilantro (to garnish) .
12 oz spinach (fresh) .
1 tbsp chili powder .
1 lb lean ground beef

Directions

Step #1 Mix seasonings & onion with ground beef.
Step #2 Form into meatballs (approx 1 inch) place this into a large soup kettle.
Step #3 Fry until ground beef is just about done.
Step #4 Add everything except corn & spinach.
Step #5 simmer until carrot is soft.
Step #6 Add corn & spinach.
Step #7 Heat thoroughly.
Step #8 sprinkle cilantro once soup has been served.
