10 Minute Szechuan Chicken Recipe

Ingredients
  • 1-3 garlic clove, minced (to taste) .
  • 3 tbsps cornstarch .
  • 1 tsp sugar .
  • 1 1/2 tbsps vinegar or white wine or rice wine or rice wine vinegar .
  • vegetable oil (for frying) .
  • 1/4 c water .
  • 4 boneless skinless chicken breast halves .
  • 6 green onions, cut into 1 inch pieces .
  • 5 tbsps soya sauce (low salt works) .
  • 1/8 tsp cayenne (to taste)

Directions
  • Step #1 Cut chicken into 1 1/2 inch cubes.
  • Step #2 Lightly toss with cornstarch in bag to coat.
  • Step #3 Heat oil in skillet or wok; stir-fry chicken & garlic until lightly browned.
  • Step #4 Add soy sauce, vinegar, sugar & water.
  • Step #5 Cover up & cook 3 mins or until chicken is cooked through.
  • Step #6 Add green onions & cayenne; cook uncovered about 2 mins longer.
  • Step #7 Serve over white rice with a side salad for a complete meal.
