Mexican Ratatouille Recipe

Ingredients
  • 2 tbsps vegetable oil .
  • 2 (6 oz) zucchini, cut into 1/2-inch cubes .
  • 3/4 tsp salt .
  • 1/4 c cilantro, sliced .
  • 1 tsp dried oregano .
  • 2 garlic cloves, minced .
  • 2 (6 oz) yellow squash, cut into 1/2-inch cubes .
  • 2 firm green tomatoes, sliced .
  • 1/4 c cilantro, sliced .
  • 1/2 tsp cumin .
  • pepper, to taste .
  • 1 medium onion, sliced .
  • 1/2 fresh jalapeno pepper, minced .
  • 1 fresh mild chili pepper, minced (optional)

Directions
  • Step #1 Preheat the oven to 350*F.
  • Step #2 Heat the oil In a large-ish skillet, & saute the onion for about 4 mins on medium heat.
  • Step #3 Add the yellow squash, salt, zucchini, garlic, cumin, oregano, & black pepper.
  • Step #4 Saute 5 mins, stirring often.
  • Step #5 Stir in the tomatoes & chile peppers.
  • Step #6 Transfer the mixture to an oven proof 2 1/2 quart casserole, cover, & bake for 30 mins.
  • Step #7 Stir in the cilantro, & serve as soon as possible or let cool to about room temp.
