Spiced Vegetable Tagine With Cinnamon Honey Lamb Recipe

Ingredients
  • Lamb .
  • 1/2 lemon, juice of .
  • 2 tsps ground cinnamon .
  • 1 garlic clove, crushed .
  • 1 tbsp olive oil .
  • salt & fresh ground pepper .
  • 2 cinnamon sticks .
  • Spiced Vegetable Tagine .
  • 300F g canned chick-peas, drained & rinsed well .
  • 1 kumara, peeled & sliced into chunks .
  • 3 tbsps ground cinnamon .
  • 2 tbsps honey .
  • 1 red capsicum, sliced .
  • 4 tomatoes, quartered .
  • 4 zucchini, cut into 4cm chunks .
  • 4 lamb fillets, backstraps .
  • 1 bunch spring onions, halved & trimmed .
  • couscous, to serve .
  • 2 tbsps honey .
  • 1 lemon, juice & zest of .
  • 500 ml vegetable stock

Directions
  • Step #1 For Lamb:.
  • Step #2 Combine cinnamon, honey & lemon juice in a bowl.
  • Step #3 Place lamb in ceramic dish & add cinnamon marinade.
  • Step #4 Spice up with salt & pepper & place this in fridge to marinate for 30 mins.
  • Step #5 Preheat oven to 200 degrees Celsius Remove lamb from fridge & transfer to baking tray.
  • Step #6 Cook lamb in oven for 10 mins for rare or up to 30 mins for well done.
  • Step #7 Remove from oven to rest.
  • Step #8 For Tagine:.
  • Step #9 Heat olive oil in heavy based saucepan.
  • Step #10 Add spring onions & kumera & cook for 5 mins.
  • Step #11 Add cinnamon sticks, lemon juice, lemon rind, garlic, honey, vegetable stock & capsicum.
  • Step #12 Cover up & bring to boil.
  • Step #13 Reduce heat & let simmer 15 mins.
  • Step #14 Add tomato, zucchini & chickpeas & cook for 15 more mins until vegetables are tender.
  • Step #15 To Serve:.
  • Step #16 Slice lamb & serve this with couscous, tagine & sliced preserved lemons & sliced chives.
