Penne A La Vodka With Broccoli Recipe

Ingredients
  • 1 (28 oz) can whole tomatoes, broken up with a spoon .
  • 1/2 tsp red pepper flakes .
  • 1 tbsp olive oil .
  • 2 tbsps tomato paste .
  • 1/2 c grated parmesan cheese .
  • 1 medium onion, finely sliced .
  • 1/2 tsp salt .
  • 1/2 c basil leaves, torn .
  • 1/2 c fat-free half-and-half .
  • 2 heads broccoli, florets only (about 8 c) .
  • 1 lb penne pasta .
  • 6 oz Canadian bacon, cut into 1/2-inch dices .
  • 1/3 c vodka

Directions
  • Step #1 Bring large pot of lightly salted water to a boil.
  • Step #2 Add pasta & cook following package directions.
  • Step #3 Add broccoli florets during last 4 mins of cooking.
  • Step #4 Drain & reserve.
  • Step #5 While pasta is cooking, heat olive oil In a large-ish nonstick skillet over medium-low heat.
  • Step #6 Add onion & cook 5 mins, stirring every once in awhile.
  • Step #7 Add Canadian bacon & vodka & cook 2 mins.
  • Step #8 Add whole tomatoes with liquid, tomato paste, salt & red-pepper flakes.
  • Step #9 Simmer, covered, 10 mins.
  • Step #10 Stir in half-and-half, 1/4 c of the cheese & half of the basil.
  • Step #11 To serve, toss penne & broccoli with sauce & top this with remaining cheese & basil.
