Pork, Potatoes And Cabbage Saute Recipe

Ingredients
  • 2 tbsps water (can use the juice from the stewed tomatoes in place of water) .
  • 2 lbs potatoes, peeled & cut into chunks .
  • 1-2 tbsp sliced fresh garlic (optional & to taste) .
  • 1/4 c cider vinegar .
  • crushed red pepper flakes (can use Tabasco sauce in place of the flakes, or a jalapeno pepper, sliced) .
  • 4 tbsps oil .
  • 3 (14 1/2 oz) cans stewed tomatoes (with juice) .
  • 1 tbsp caraway seeds, crushed .
  • 3 tbsps flour .
  • 7-8 c chicken broth .
  • 1/4 c water .
  • 1 medium green cabbage, sliced .
  • 1 (2 lb) boneless pork shoulder, cut into 1-inch cubes .
  • 2 onions, sliced .
  • salt & pepper .
  • sugar

Directions
  • Step #1 Heat oil In a large-ish Dutch oven over medium-high heat.
  • Step #2 Working in batches add in the pork & brown on all sides.
  • Step #3 Transfer to a plate or bowl.
  • Step #4 Add in onion, garlic (if using) & about 2 tbsps water (or juice from the tomatoes); cook this until softened (about 5-6 mins).
  • Step #5 Return the pork (with all the dripping from the plate) to the pot.
  • Step #6 Add in cabbage, caraway seeds & salt, tomatoes, broth, vinegar, crushed red pepper flakes, pepper & sugar to taste; bring to boil.
  • Step #7 Reduce heat to low & partially cover the pot & let simmer for about 30 mins.
  • Step #8 Add in potatoes; cook for 15 mins or until potaoes are fork tender.
  • Step #9 In a small bowl, whisk together the flour & water until smooth.
  • Step #10 Add into simmering stew; cook this until thickened (about 5-8 mins).
