Greek New Year's Orange And Brandy Cake (vassilopita) Recipe

Ingredients
  • 1/2 c almonds, whole, blanched .
  • 4 tsps baking powder .
  • 3/4 c unsalted butter, melted .
  • 2 tbsps sugar .
  • 4 large eggs, separated .
  • 1 orange, zest of, grated .
  • 1/2 c brandy .
  • 1/4 tsp baking soda .
  • 4 c flour .
  • 1 c sugar .
  • 1 lemon, zest of, grated .
  • 1 1/4 c orange juice, freshly squeezed

Directions
  • Step #1 Preheat oven to 375 F, & grease a 10" round cake pan.
  • Step #2 Beat the egg yolks with the sugar until creamy (about 3 min).
  • Step #3 Add butter & beat an extra min.
  • Step #4 Beat in orange juice & brandy.
  • Step #5 In a separate bowl, whisk the flour with the baking powder, baking soda & zests.
  • Step #6 Add the dry ingredients to the yolk mixture, & stir until thoroughly mixed.
  • Step #7 Clean the beaters, & beat the egg whites in a clean bowl until soft peaks form.
  • Step #8 Fold them carefully into the batter.
  • Step #9 Pour the batter into the cake pan & shake carefully to even the top.
  • Step #10 Decorate the top this with almonds (if making for the new year, write the year with the almonds).
  • Step #11 Bake for about an hr, or until golden brown on top, & a toothpick inserted in the center comes out clean.
  • Step #12 Cool before removing from the pan.
