Ingredients
  • 2 tbsps fresh parmesan cheese, grated .
  • 1 tbsp balsamic vinegar .
  • 2 c tomato-basil pasta sauce .
  • 1/4 tsp fresh ground black pepper .
  • 1 (16 oz) package polenta, cut in 12 slices .
  • 1 (7 oz) bottle roasted red peppers, drained & sliced .
  • 1/4 pitted kalamata olive, sliced .
  • 3/4 c mozzarella cheese, shredded

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Combine first 5 ingredients in a saucepan.
  • Step #3 Simmer 10 mins.
  • Step #4 Spread sauce in bottom of a greased 13 x 9 baking dish.
  • Step #5 Arrange the polenta slices over the sauce.
  • Step #6 Spread remaining sauce over.
  • Step #7 Sprinkle top with cheeses.
  • Step #8 Bake 20 mins.
