Ingredients
  • 1 c orange juice .
  • 2 c brown sugar .
  • 2 c water .
  • 6-7 lbs carrots

Directions
  • Step #1 Wash & peel carrots.
  • Step #2 Wash again.
  • Step #3 Cut carrots into 3 inch pieces.
  • Step #4 Slice thicker ends in half lengthwise.
  • Step #5 Combine brown sugar, water & orange juice in a saucepot.
  • Step #6 Cook over med-heat/flame, stirring until sugar disolves.
  • Step #7 Keep syrup hot.
  • Step #8 Pack carrots tightly into hot jars, leaving 1-inch headspace.
  • Step #9 Ladle hot syrup over carrots, leaving 1-inch headspace.
  • Step #10 Remove air bubbles.
  • Step #11 Adjust two-piece caps.
  • Step #12 Process pints & quarts 30 mins at 10 lbs pressure in a steam-pressure canner.
