Spinach Pappardelle Recipe

Ingredients
  • salt .
  • 2 shallots, sliced .
  • 1 tbsp mustard .
  • 10 large spinach leaves, julianned .
  • pepper .
  • 1 tbsp flat leaf parsley, leaves only sliced .
  • 1 tbsp double cream .
  • 50 g butter .
  • 5 garlic cloves, sliced .
  • 150 ml white wine .
  • 150 g parmesan cheese, freshly grated .
  • 500 g dried pappardelle pasta or other long pasta .
  • 4 egg yolks .
  • 300F ml chicken stock or vegetable stock

Directions
  • Step #1 Cook pappardelle until al dente.
  • Step #2 Drain & reserve.
  • Step #3 Heat the butter in the pan & saute the shallots & garlic until soft.
  • Step #4 Add the wine & bring to boil, simmer until reduced to half.
  • Step #5 Then add chicken stock & reduce to half again.
  • Step #6 Add mustard, cream & the pasta, & let simmer for couple of mins.
  • Step #7 Spice up.
  • Step #8 Add the egg yolks, spinach, parmesan & parsley & mix.
  • Step #9 Serve as soon as possible.
